tests: Enable some OTel PHP tests

Motivation

Changes

The 1.2.0 release of the PHP tracer was made, which now includes the required mapping changes. This PR enables the test.

Additionally, it also enables an OTel test that should have been enabled at the beginning.

Workflow

1. ⚠️ Create your PR as draft ⚠️

3. Mark it as ready for review
   • Test logic is modified? -> Get a review from RFC owner. We're working on refining the codeowners file quickly.
   • Framework is modified, or non obvious usage of it -> get a review from R&P team
