Mac Catalyst support

Is there any plan to support Mac catalyst build?

I've brought this up with the SDK team previously, but because the encoders/decoders work differently on Mac and iOS it's a bit tricky. I'll bring it up again to see how it goes, but unfortunately it's not on the roadmap for now at least.

@maxxfrazer But for supporting maccatalyst all you need to is to compile xcframework adding maccatalyst support because Audio/Video works same as for iOS, mac catalyst on mac just handle it under the hood.

@rweindl @m1entus @rtemple6 there's a bit of resistance right now due to priorities and there being a bit of work beyond just adding the platform in the build process. i know it's annoying, but if you were to make jira tickets it would help me build the case for catalyst.
